These yummies are the perfect soultastic Sunday Funday comfort food for just flying solo or for the whole family! You can refrigerate any leftovers for easy breakfast the next day. Now, that’s doubly awesomesauce!
Here’s the scoop –
1 1/2 cups of Oat Flour
1/2 cup of oats and ground flax seed
2 teaspoons of baking powder
1 teaspoon of roasted saigon cinnamon
1/2 teaspoon of sea salt
1/2 teaspoon of vanilla extract
1 tablespoon of maple syrup
1 1/2 cups of vanilla almond milk
Topping:
sliced banana
vegan chocolate chips
raw walnuts
dash of cinnamon
Mix dry ingredients and then combine wet ingredients. Heat hot skillet with your favorite vegan cooking spray (I used grapeseed oil) and pour desired size of the pancake mix into the skillet (about 3-4 inches in diameter). Let the pancake mix bubble, then flip to golden brown on the other side. I keep my pancakes warm in the oven at 200 degrees until all pancakes are cooked. Top with sliced banana, dash of cinnamon and a handful of vegan chocolate chips and walnuts. Makes about 9-12 pancakes depending on the size. Serve with warm maple syrup and a lot of awesomesauce love!
