If you love bananas and you love chocolate, you will love this dessert.
A very special young superhero in my life wanted a banana the other day, but I didn’t have any fresh bananas. I did, however, have frozen bananas that I keep in the freezer for smoothies. So I thought perhaps he could enjoy it as a banana popsicle and at age 3 he quickly retorted “No!”
I then had the idea to slightly warm the frozen banana up so that he could eat it with a spoon and it dawned on me that I could make this very minimal and super easy, great-tasting vegan ice cream type dessert. Here’s what came of our banana-loving interaction. I call it the Kool Kian. I’m trusting you will enjoy it as much as I do!
Ingredients
~ 1 frozen banana (slightly at room temperature or warm in a microwave for 20 seconds or so)
~ handful of vegan dark chocolate chips (purchased at any health food store)
~ sprinkle of cinnamon
~ handful of homemade vegan sweet/spicy walnuts and pecans (see the minimalist baker for the recipe – http://minimalistbaker.com/15-minute-candied-spiced-nuts-1-pan/)
Slightly smash the frozen banana once thawed a bit as suggested above, sprinkle with a few dashes of cinnamon, top with a handful of dark chocolate chips and homemade sweet and spicy nuts).
Enjoy!
